Beer Bread

2 ½ cups flour
3 tsp baking powder
1 tsp salt
1 can beer (330mls)
¼ cup flax fibre - original
1 Tbsp stock powder
ground black pepper
herbs to taste
1 tsp garlic granules

Topping:
1 cup grated cheese
pumpkin seeds
sunflower seeds

  1. Preheat oven to 200°C
  2. Mix all ingredients quickly
  3. Spoon into greased loaf tin
  4. Top with nuts, seeds and grated cheese
  5. Press into prepared tin
  6. Bake for 35-40 minutes

Carrot slice

1 ½ cup grated carrot
1 cup flour
1 tsp baking soda
1 tsp cinnamon
1 cup sultanas
½ cup raw sugar
¼ cup flax fibre - original
½ tsp salt
2 eggs
½ cup cooking oil

  1. Beat eggs and oil together
  2. Add to previously mixed dry ingredients
  3. Spread mixture into prepared cake tin
  4. Bake at 180°C for 30 minutes
  5. Sprinkle seeds, nuts of choice or ice when cold

Chocolate Chip Biscuits

120g butter
60g sugar
180g flour
120g chocolate chips
50g flax fibre - original
3 Tbsp sweetened condensed milk
1 tsp baking powder

  1. Cream butter and sugar
  2. Add condensed milk
  3. Combine dry ingredients
  4. Add chocolate chips
  5. Mix well and roll into balls
  6. Place on baking tray and flatten with a fork
  7. Bake at 180°C for 20 minutes

Easy Fruit Cake

3 cups sultanas
250g melted butter
1 ½ cups sugar
1 tsp almond essence
½ cup flax fibre - original
2 ½ cups flour
3 eggs
1 ½ tsp baking powder

  1. Put sultanas in a saucepan and cover with water
  2. Bring to boil and simmer for 8 minutes
  3. Drain well
  4. Beat eggs with sugar and add melted butter
  5. Add sultanas and almond essence
  6. Mix dry ingredients into liquid mixture
  7. Spoon mixture into 20cm cake tin

Bake at 160°C for 1 to 1 ¼ hours until cake springs back when lightly touched.
Cool in tin before turning out.

Ginger and Cardamon Muffins

1 cup caster sugar
2 cup flour
¼ cup flax fibre - original
1 ½ tsp baking soda
2 tsp ground ginger
1 tsp ground cardamon
100g butter
2 eggs
2 Tbsp golden syrup
1 cup milk

  1. Mix together dry ingredients
  2. Melt butter and golden syrup
  3. Cool, then add milk and eggs (beaten)
  4. Blend lightly
  5. Spoon mixture into prepared muffin trays
  6. Bake at 200°C for about 12 minutes

Flax Fibre Crackers

¼ cup flax seeds
¼ cup flax fibre - original
1 ½ cups flour
½ tsp baking powder
½ tsp salt
4 tsp softened butter
½ cup milk
1 Tbsp onion stock powder
1 cup grated cheese

  1. In a bowl combine flax seeds, flax fibre - original, flour, baking powder, salt, butter, onion stock powder and cheese
  2. Stir in milk to form a soft dough
  3. Wrap dough in cling film and chill for 10 minutes
  4. Divide dough into four pieces
  5. Roll out each very thinly to 2mm thick
  6. Cut into shapes
  7. Bake at 160°C for 20 minutes until crisp and golden
