Lorina's Christmas Morning Porridge

½ tsp salt
1 Tbsp mixed spice
1 sliced banana
dried fruit (incl. cranberries)
nuts or seeds to liking

Add to boiling water
Simmer for 5 minutes then add:

1 cup rolled oats
½ cup flax fibre original
¼ millet

Make a thick gruel consistency (too thick makes it gluggy)
Cover and simmer for 5 minutes
Serve hot with:

  • Dark brown sugar or pure maple sugar and butter (never margarine)
  • Milk and sweetener as above

Apple and Flax Fibre Pancakes

(Makes about 12)

1 cup flour
1/3 cup flax fibre - original
3 Tbsp sugar
1 Tbsp baking powder
½ tsp salt
1 tsp cinnamon
dash of nutmeg
2 eggs separated (whites beaten stiffly)
1 ¼ cup milk
3 Tbsp melted butter
1 cup grated apples (skinned and cored)

  1. Combine dry ingredients
  2. Beat together egg yolks, milk and melted butter
  3. Add to dry ingredients
  4. Combine until it becomes a pouring texture - add more milk if necessary
  5. Grate apple and add to batter
  6. Stir to combine
  7. Fold in egg whites
  8. Pre-heat pan
  9. Pour batter into pan in 1/3 cup measures
  10. Cook until bubbles appear in surface, turn over and cook until lightly browned
