Cheese Ball
250g cream cheese
3 chopped gherkins
1 dsp plum sauce
1 dsp sherry
2 dsp onion stock powder
1 Tbsp chopped parsley
1 tsp chopped mint
1 Tbsp garlic chives
½ cup grated cheese
ground black pepper
¼ cup flax fibre - original
½ cup chopped nuts
- Mix together and adjust to taste
- Roll into balls
- Roll in chopped nuts of your choice
- Wrap in cling film and place in refrigerator
You could also add crushed pineapple (drained), olives, capers etc.
Crunchy Nuts
2 egg whites
6 cups nuts (macadamia, pecans, cashews etc)
1/3 cup flax fibre - original
1 Tbsp ground cinnamon
2 tsp ground ginger
1 cup caster sugar
- Pre-heat oven to 120°C
- Lightly beat egg whites with a fork
- Add to nuts in big bowl and stir to coat
- Combine cinnamon, ginger, flax fibre - original and sugar
- Add to nuts
- Toss well to coat
- Place on a tray covered with baking paper. Carefully separate nuts
- Bake uncovered for 2 ½ hours
- Stir occasionally
- Turn off oven and allow to cool
- Store in an airtight container
