Cheese Ball

250g cream cheese
3 chopped gherkins
1 dsp plum sauce
1 dsp sherry
2 dsp onion stock powder
1 Tbsp chopped parsley
1 tsp chopped mint
1 Tbsp garlic chives
½ cup grated cheese
ground black pepper
¼ cup flax fibre - original
½ cup chopped nuts

  1. Mix together and adjust to taste
  2. Roll into balls
  3. Roll in chopped nuts of your choice
  4. Wrap in cling film and place in refrigerator

You could also add crushed pineapple (drained), olives, capers etc.

Crunchy Nuts

2 egg whites
6 cups nuts (macadamia, pecans, cashews etc)
1/3 cup flax fibre - original
1 Tbsp ground cinnamon
2 tsp ground ginger
1 cup caster sugar

  1. Pre-heat oven to 120°C
  2. Lightly beat egg whites with a fork
  3. Add to nuts in big bowl and stir to coat
  4. Combine cinnamon, ginger, flax fibre - original and sugar
  5. Add to nuts
  6. Toss well to coat
  7. Place on a tray covered with baking paper. Carefully separate nuts
  8. Bake uncovered for 2 ½ hours
  9. Stir occasionally
  10. Turn off oven and allow to cool
  11. Store in an airtight container
